The mee siam features firm and springy mee hoon with crunchy bean sprouts, firm tau pok pieces and a boiled egg, soaked in a pleasantly flavoured gravy with a hint of limey. It is topped with chopped spring onions, and served with a piece of green lime and a very savoury chilli paste.
