Fried Oyster Omelette

Lim’s Fried Oyster is a hugely popular stall selling fried oyster omelette. This fried oyster omelette is not the crispy type. It has a mixture of more eggs than starch that is pan fried until there are small pockets of crispiness and nice smoky flavours of wok hei. The handful of oysters are of decent size, and the limey tasting chilli dip goes well with the oysters.

Although I would have preferred my fried oyster omelette crispier, this fried oyster omelette has very likeable flavourings. I like it. Thumbs up.
