The Noodle Memories serves a variety of Malaysian-style pan mee. As shown above is their jumbo pan mee which comes with a piece of chicken cutlet, minced meat, black fugus, a soft-boiled egg, and a piece of their homemade fried bean curd skin, in a bowl of tossed noodles. A small bowl of pleasantly flavoured soup with subtle spicy undernotes is served alongside.

The chicken cutlet is tender, juicy and meaty, coated in a crusty crust. The minced meat is firm and meaty with a savoury taste, while the black fungus is crunchy. The soft-boiled egg has watery yolk and whites. The homemade fried bean curd is thin and chewy with airy crispy edges. The tossed noodles is firm and springy and comes with some vegetables. The noodles is tossed in black sauce seasoning, and topped with crunchy chilli flakes with tones of spicy and sweet.
