Ah Chuan Fried Oyster Omelette does their namesake fried oyster omelette with thick gooey blobs of starch and eggs, with oysters and spring onions added, and topped with some parsley. The starchy parts are soft and chewy with a light crisp. Likewise for the eggs, pan fried to a golden crisp. The oysters are plump and juicy and goes really well with the limey tasting chilli dip.

This fried oyster omelette is tasty and flavourful. Definitely a good one in my books. Good!

Fried Carrot Cake

Ah Chuan Fried Oyster Omelette does fried carrot cake as well, in the usual black and white versions.

The white version of fried carrot cake uses firm cubes of radish cake pan fried with chye poh and eggs. It is done flat style like a pancake. It is pan fried until the egg coating is crispy, and served topped with chopped spring onions. Crispy and flavourful, what is there not to like about this fried carrot cake? Good!

As for the black version of fried carrot cake, the radish cake cubes are wok fried instead pan fried. Chye poh, egg and sweet black sauce is added to it. This fried carrot cake has nice smokey flavours of wok hei, is a bit savoury from the chye poh and mildly sweet from the sweet black sauce. It is not crispy though, but its nice flavourings and wok hei makes up for it. It is likeable.

Both versions of fried carrot cake are nice in their own ways. Personally I like mine crispy and flavourful. My vote goes to the white fried carrot cake here.
