Fried Carrot Cake

Teochew Carrot Cake sells only the white type of fried carrot cake, Teochew style. Instead of large cubes of radish cake, this is pan fried flat fully covered with eggs, somewhat like a pancake. This fried carrot cake has nice flavours and uses chai poh that has a slightly sweet taste. It is pan fried until there is a slight crispy texture outside and soft inside, and topped with spring onions. There is even a version with prawns. I like this.
