The Singapore version of fried Hokkien mee (fried Fujian noodles) is a stir-fried dish of egg noodles and rice noodles using pork lard in a flavourful broth (stew of prawn heads and meat), with eggs, bean sprouts, sotong (sliced squid), prawns added as ingredients. A side of lime and sambal chilli tops it off. This stall’s fried Hokkien mee is cooked well, with the stock’s flavours soaking into the noodles and yet not overly wet, balanced and tasteful flavours.
